My friend Jess and her colleagues are trying to eat on the budget of an American who's on food stamps as part of the Food Stamp Challenge. They each have to get through the whole week on $29.35. Total. Check out their blog on the challenge here. What you'll learn is that it's virtually impossible to eat a healthy diet when you're poor. And that's a problem.

My sister actually eats this way all the time just because she's really frugal and I think she likes the challenge.

I'm not trying to go against the political statement or anything, but I do know that it can be done somewhat healthfully.

Right, but even in Hillbilly Housewife's plan, most of her meals have about 25% of calories coming from fat. You can buy cheap food and survive, but fresh fruits and vegetables are almost always out of the picture. It's just very far from ideal.
